Two Distinct Sides To Japan, Says Rev. McLean
Method :
Remove skin, intestines and wash lobster.
Cut into bite size portions.
Cut green onion into small pieces. Soak shiitake, remove stem
and chop.
Heat 3 tbsp, oil in a pan, saute lobster, onion and shiitake. Add
shoyu, sake and 1 tbsp, sugar and continue cooking until most of
juice has evaporated.
Just before removing from fire, mix 2 tbsp, cornstarch with same
amount of water, add this and green beans to lobster .pan.
In a bowl combine 3 tbsp., cornstarch, katsuobushi stock salt 1
thsp. sugar and eggs. Place oil in a frying pan, heat, pour one-fifth
portions of egg mixture. By tilting the pan, spread the e™ mix
ture into thin, even sheets. Place a portion (one-fifth) of "lobster
ana vegetables on top. Wrap the sheet of eg-g-s around it, foldin°- the
ends, making a nice, neat roll.

Repeat until you have made 5 similar rolls. To seal the ed°-e=;
pour a tablespoon of egg mixture on the seams and fry lightiv until
the open parts are closed.
Slice into 3 pieces and arrange on platter.

Two Distinct Sides To Japan, Says Rev. McLean
Method :
Remove skin, intestines and wash lobster.
Cut into bite size portions.
Cut green onion into small pieces. Soak shiitake, remove stem
and chop.
Heat 3 tbsp, oil in a pan, saute lobster, onion and shiitake. Add
shoyu, sake and 1 tbsp, sugar and continue cooking until most of
juice has evaporated.
Just before removing from fire, mix 2 tbsp, cornstarch with same
amount of water, add this and green beans to lobster .pan.
In a bowl combine 3 tbsp., cornstarch, katsuobushi stock salt 1
thsp. sugar and eggs. Place oil in a frying pan, heat, pour one-fifth
portions of egg mixture. By tilting the pan, spread the e™ mix
ture into thin, even sheets. Place a portion (one-fifth) of "lobster
ana vegetables on top. Wrap the sheet of eg-g-s around it, foldin°- the
ends, making a nice, neat roll.

Repeat until you have made 5 similar rolls. To seal the ed°-e=;
pour a tablespoon of egg mixture on the seams and fry lightiv until
the open parts are closed.
Slice into 3 pieces and arrange on platter.
