Chawan Mushi
One of the most memorable Japanese dinners I have enjoyed was
as a guest in a tiny New’ York apartment. Kimiko- an prepared an
elegant, several course, dinner in her matchbox kitchenette for
six of us. How she did' it, we’ll never know. She began the meal
with the following CHAWAN MUSHI baked in her pocket size
oven. It was a smashing success.
LYNBROOK ^

1.7 MILES
QUONSET

Ingredients:

cup peas
small shoots bamboo, sliced
6 fresh mushrooms, sliced thin
6 sprigs of parsley
Fresh ginger (size of thumb nail) chopped fine
4 cups soup stock or dashi
2 tbsp, shoyu
4 eggs
Dash of Ajinomoto
Method:
Divide and arrange ingredients into 6 chawan or bowls.,Mix
soup stock with eggs, shoyu and Ajinomoto, lour over each oow i
until almost full.
Set the bowls . in cake pan filled with warm water. Bake m
slow oven for 15 minutes, Turn off heat and leave it in there
until time to be served.
