of its social and business
rituals over cups of coffee at
thousands of coffee shops
found on almost every city
corner.
This island nation has be
come a bastion of coffee
drinkers - last year it import
ed 192,000 tons of raw coffee
beans — and .the kisaten ■■ or
coffeehouse, caters to their
every mood and need.
There are 140,000 of them
in this country of 117 million
people —one shop for every
836 people. About 18,000 of
them are in Tokyo alone,
said Hisao Fujiu, editor of
the monthly magazine Coffee
Shop Management.
Why so many?
You know the rabbit hutch
term that refers to Japanese
homes that are so small there
is no possibility for sociali
zation, said Fujiu. Well, since
Japanese don't bring people
to their home to entertain,
they take them out.
For those without the
money or taste for expensive
bars and restaurants, the ki
saten is the ideal meeting
place.
Fujiu, who is an authority
on these establishments (“I
visit a maximum of 16 kisatens a day”), said one reason
people frequent them is that
they provide a modicum of
social democracy in a highlystratified society.
They're democratic becau
se people can easily enter, he
said. And even if she is alone,
a wotnan does not feel uneasy
at a kisaten.
Kisatens offer refuge from
the winter cold and a cool
retreat from the summer heat.
They are places where any
one can sit and sip coffee for
about $1.10 a cup — a stiff
price paid as much for the
atmosphere as the coffee,
refills are almost never free,
and depending on the frills,
the price of a cup can soar
to $2.20 or more.
Most go by western names
like Colorado, The Pines or
Caravan, which apparently
sound chic to the Japanese
ear. One owner named his ki
saten Michael Wong because
it's between American and
Chinese.
Coffee connoiseurs can of
ten chose from a long list
of beans such as Kilimanjaro,
Blue Mountain and Colom
bian. The favorite blend is
American, a large mug of weak
coffee as asociated with U.S.
drinking habits.
They are totally different
from American cafes and Bri
tish pubs, said Fujiu. They
have almost nothing in com
mon with the fast-food eate
ries called coffee shops that
dot American roads. Some
sell food on the side, usually
cakes and sandwiches, and
not much else.
Salarymen and ols, as male
and female white-collar wor
kers are called, jam kisatens
during daylight hours to sip
coffee or juice, eat cakes, talk
. business or just snooze. At
night, the neckties and stock
ings disappear as casually
dressed couples and students
camp out at kisatens for
hours.
The pursuit of customers
also has- spawned kisatens
with themes. These offer
such attractions as jazz and
classical music, sing-alongs,
English language conversa
tion, furtune-telling, stand
up comedy and now — nude
hostesses.
Japan made the transition
to a nation of coffee drinkers
after World War II. But the
bitter drink was introduced
here long ago. Foreign mer
chants and traders brought
coffee into Japan in 1767,
Fujiu said, a time when tea
ceremony was a diversion of
the elite. •
In those days, foreigners
were served coffee by geisha
style entertainers. The vigil
ance of Japan's leaders that
restricted foreigners to tiny
enclaves in port cities effec
tively kept coffee out of reach
of ordinary people.
But with the end of Japan 's
exclusion policy in the mid19th Century, coffee began to
trickle into the country. By
the 1880s, Japan had its first
kisaten — a cafe in Tokyo/s
Ueno district that catered to
artists and intellectuals.
After World War II, the
American occupation forces
introduced ground coffee to
Japan, Fujiu said, and sipping
java slowly gained popularity.
Japanese today drink almost
as much coffee as traditional
green tea. Statistics from the
Agriculture Ministry show that
in 1979 Japanese drank tea
53.8 per cent of the time and
coffee 46.2 per cent.
In the same year, eacn Ja
panese citizen-consumed an
average bf 164 cups of coffee.
The younger generation in
particular starts its day by
downing a quick cup of in
stant coffee, lingers over a
post-lunch cup at the local
kisaten and relaxes in the
evening with a home-ground
blend — usually adding a large
dose of sugar and cream.

ing United States at 11.8,
