Claude Labrecque passed
away at the age of seventythree years and two months.
He was born in Montreal in
1914 in the parish of Saint En
fant Jesus and pursued his
elementary education in
Beloeil, Notre Dame College,
and Mont Saint Louis Col
lege. He then pursued a
classical course at Sainte
Marie College where he ob
tained his BA in 1935. He won
a Rhodes Scholarship to Oxford University and for three
years he worked on his Mas
ter of Arts degree.

licenced fugu chef, one of a
prestigious group of chefs in
Japan who are allowed to
prepare the potentially dan
gerous gourmet delicacy
blowfish, or globefish.
Akisawa's work experience
includes stints at the Keisei
and Jukaku Hotels in Japan,
and in West Vancouver at the
Ichiban restaurant.
Japanese cooking is com
plicated by the fact that chefs
must learn some of the
culture and the language of
j the country, as the presenta
I tion of dishes tells a story.
. Akisawa will concentrate on
washoku (traditional hot and
cold dishes) and sushi. Basic
Japanese cooking will in
clude sashimi, katsuramuki,
j fish, vegetables and tempura.
Students, 16 to a class, will
be using the kitchen facilities
now being used for Chinese
cooking instruction at VVI in
the mornings. To accom
modate the extra re
quirements a new walk-in
cooler and freezer have been
purchased.
Students will prepare and
serve the food at a sushi bar
in the evening, as part of the
regular cafeteria food service
operation open to the public.
Because of the critical skill
shortage, the federal govern
ment is funding the major
cost of the course, Wood
says. There are no tuition fees
and eligible students may
qualify fora training allowance
through Canada Employment
and Immigration. It is ex
pected that an apprentice
ship program will be set up
for graduates of the course.
